Oh pizza, How i love you

As I grow older I find myself quoting my father more and more. Since embracing the primal/paleo lifestyle I have found that the food side was the hardest to cope with. There are certain foods like hamburgers, pizza, chips, and sweets that, healthy or not, are very satisfying. They just make you feel good physically, spiritually, emotionally, and on some planes that I’m not even aware of.
In lieu of ordering every cookbook in existence I decided to take matters in my own hand. I first started finding recipes for things I wanted to eat but made with healthier ingredients. Speaking from experience, when a recipe for pizza asks you to use cauliflower as the primary ingredient you know there’s a problem. Now if you just love the shit out of some cauliflower or whatever weird ass ingredient they ask for then have at it. I find these things to have taste, texture, and scent issues which for me is the holy trinity of a failed recipe. It is also why I think people fail on diets and the like. If you don’t find the healthy foods that taste good before you embark on a dietary change then you have sabotaged yourself. Having found no acceptable pizza recipe I could hear my dad saying “if you want something done right, do it yourself”. So here is a recipe that meets my criteria to officially be called pizza. 4 eggs
1/2 cup of coconut milk (or full fat milk)
1/3 cup coconut flour
1/3 cup flax meal
1/2 tsp baking powder
Add any spices or flavors you’d like to get a tasty crust. You can also cut the crust in strips and use as breadsticks. I personally add:
1 tbsp oregano
1 tbsp basil
garlic powder (i don’t measure, i just add til i think its awesome)
I mix mine together in a kitchen aid mixer. Sift the dry ingredients together then add to the liquid ingredients which should already be in the mixer. This will make a pizza crust. It will have the consistency of pancake batter. Use parchment paper and pour the batter into whatever shape you want your pizza to be in. Cook at 350(depending on your oven’s personality) for 20 minutes or so until it is browned to whatever level you like. While its cooking I usually prep my other ingredients. Cook or chop whatever is going on the pizza because as soon as its done cooking your going to switch the oven to broil, top your pizza, throw it back in until the cheese is melted or its just perty enough for your liking.
Every time I look at this picture I’m immediately hungry for pizza.
